When I asked my mom about the recipe I found for Wilted Lettuce, she didn’t have any particular memories concerning it, but my Aunt Susie did.

I imagine the thrill of getting to run over to a neighbor’s garden–Mrs. Spillman was her name–and pick a head of iceberg lettuce from the earth. The lettuce, once washed and chopped, wilts in a hot pan filled with bacon, bacon drippings, cayenne pepper, vinegar and sugar. My aunt still remembers the taste of hot bacon grease all these years later.

Wilted Lettuce

Ingredients

  • 1 head lettuce
  • 4 slices bacon, fried crisp
  • 1 onion
  • 1 tbs. sugar
  • 1 tsp. salt
  • dash of cayenne pepper
  • 1/4 cup white vinegar

Directions

Fry bacon in pan over medium high heat. Chop one onion and with the bacon scatter through the lettuce. Add to bacon drippings 1 tablespoon sugar, 1 teaspoon salt, a dash of cayenne pepper and 1/4 cup vinegar. Let come to a boil and pour over lettuce.
